There are places where you eat well, and there are places where every bite surprises you. Xokol is one of the latter, and that's no accident: it holds one star in the 2026 MICHELIN Guide Mexico.
Xokol is in the Santa Teresita neighborhood and is led by chefs Óscar Segundo and Xrysw Ruelas Díaz. Source: Excélsior (in Spanish).
The good
- Consistency. The menu changes constantly, but the flavor stays warm and consistent on every visit.
- Corn as the star. From the blue tortilla hand-stamped with the Virgin, tasting of real corn, all the way to dessert.
- The first course. A delicious pistachio mole.
- The sweet potato tamal. In sweet potato mole, with sweet potato chips and cheese inside.
- Dessert. Flourless corn bread, goat's milk cream with corn silk, and caramelized popcorn to finish.
Our favorite
The suckling pig in green pipián with rice. It took us straight back to the ranch, when we used to mix rice into pipián or mole and that combination tasted like heaven. Some flavors aren't just eaten, they're remembered.
The experience
I made a reservation, and here's something else I liked: you get a maximum of two hours at the table. That keeps reservations available at their scheduled time, and two hours is honestly plenty of time to wait for your dishes and eat at a relaxed pace.
I don't know the whole menu, and to be honest I don't think I ever will, because it changes constantly. But based on what I tried, the experience was excellent.
Verdict
Everything was delicious. A dinner built around corn and Mexico, and one of the best dining experiences in Guadalajara.
What to order
- Whatever is on the menu of the day: it changes constantly and everything I tried was excellent
- If it's available, the suckling pig in green pipián with rice
